Shaljam ka Panni wala Achar

1 kg turnips-Shaljam, peel & cut round medium thick slices.
In a pan full of water boil these slices, till medium cooked, don’t boil till too soft.
Strain and save and cool the water.
In a big bowl add mustard seeds/ raee , 4 table spoons, red chili powder, salt, 3/ 4 table spoon garlic ginger plaste, mix and coat each Shaljum piece on both sides, spread these pieces on a tray and put in sun light for 4/5 hours.
Now in a plastic or glass jar with lid, add turnip water, 6 table spoons of sugar stir, add masala coated turnips, add turnip water till it covers all the turnips and keep some water aside to add later,
now add 1/2 cup of white vinegar on top and close the lid and now put the jar in sunlight for 4/5 hours for 3 days,
If the level of water decreases top it up with saved turnip water and add 3/4 table spoons of vinegar in the last.
After 3 days in sun, your achar is ready to eat!
