Tandoori Chicken Kababs

Yummy, spicy, delicious Chicken Tandoori Kabab recipe which you will want to make again and again :)

Ingredients:


Marinate 1:

Chicken leg meat pieces or Chicken legs pieces - 1/2 kg

Garlic ginger - 2 Tbs each

Vinegar - 2 Tbs




Marinate 2:

Salt - as per taste

Yogurt - 1 cup

Red Chilli powder - 1 tsp

Kashmiri Chilli powder - 1 tsp

Turmeric - 1/2 tsp

Black salt (kala namak) - 1/4 tsp

Mace (jaifal) powder - 1/2 tsp

Cardamon (Ilaichi) powder - 1/2 tsp

Garam Masala - 1/2 tsp

Cumin powder - 1/2 tsp

Tandoori Masala - 1 Tbsp (optional)

Meat tenderiser - 1/2 tsp

Orange food color

Oil - 4 Tbsp

Gram flour - 1 tsp

Lemon juice, green coriander for garnish




Method:

  1. Put cuts on chicken if you are using Chicken legs or big Chicken pieces.

  2. Wash Chicken, add some water, then add some salt, garlic ginger and 2 Tbsp vinegar. Leave to marinate for 2 hours.

  3. Now prepare the marinate. We will make "hung yogurt" first. Measure 1 cup of yogurt and put it in colander. Leave it for few hours, All yogurt water will be drained leaving you with hung yogurt which we will use for marinate.

  4. In yogurt add all garlic ginger and all the masalay to make a paste.

  5. Now drain the water from the chicken, leave it 10 min to allow all water to be drained.

  6. Now apply yogurt mixture and marinate for 3 -4 hours or preferably overnight.

  7. Thread the chicken in skewers and arrange on the baking tray. If using Chicken legs just lay them flat on the baking tray.

  8. At this stage you can smoke the chicken by putting a piece of burning coal in the baking tray and covering it and leaving it .

  9. Bake in pre-heated over for 25 min.

  10. 5 minutes before removing from the oven, apply any leftover marinate to chicken and bake again.

  11. Once ready remove the tray from the oven. The chicken will be light brown.

  12. Before serving, pour some warmed oil/ghee on the kababs, sprinkle lemon juice, chat masala and green corainder.

  13. Serve with Matar Pulao, and Chutneys and enjoy with friends & family :)
