Dhaba Daal Fry

Ingredients:
Masoor daal (Red Lentil) - 1 cup
Moong lentil (Yellow lentil) - 1/2 cup
Chana lentil (split Chick peas) - 1\2 cup
Onion - 2 sliced
Tomatoes - 2 sliced
Green Chilles - 4 - 5 sliced *
Garlic cloves - 5
Salt
Turmeric - 1 tsp
Red Chilli powder - 1.5 tsp *
Zeera powder - 1\2 tsp
Red whole chillies (round or long) - 4
Cumin - 2 Tbsp
*Adjust amount of green chillies and red chillies according to how hot you want your daal to be.
Method:
- Soak all your daals and boil them so they are tender. I boiled them separately and mixed them once they were tender. 
- Take one cup water in a pot and add onions, tomatoes, green chillies, garlic to it. 
- Now add all your boiled daals. 
- Add red chilli powder, turmeric and cumin powder. 
- Put the lid on and let it cook for 30 min, check if it needs more water add some water. 
- Your daal consistency should be very creamy. Once all onions, tomatoes, garlic, daals are all cooked together well, use a hand blender and blend it to get a smooth texture. Alternatively You can always use a hand blender or back side of your kafgeer to blend it but using hand blender is quicker. 
- Now its bhagar's time! 
- Take oil in frying pan, add Cumin, once it starts to split add the whole red chillies and a bit of turmeric powder. 
- Now pour your ready bhagar on the Daal mixture. You will hear the most amazing sizzle sound which is just awesome :) 
Your Dhaba Daal Fry is ready.
Rice
For rice you can make your bhagar walay rice. Add some whole green chillies, cloves, green cardamom in the boiling water and it gives it a nice fragrance.
Kachoomar: Just rougly cut your onions and tomatoes, add some chopped green corriander and lemon juice and mix it together.
