Khoya gajar halwa

INGREDIENTS:
700gms shredded organic carrots
250gms khoya (store bought) leave some for garnishing
400gms sugar
5Tbsp heaped desi ghee
2tsp green Cardmom powder
1tsp kewra
Milk to soak the carrots
1/4 tsp nutmeg and mace
Nuts optional
METHOD:
Boil the shredded carrots in milk till all the milk evaporates stirring it from time to time. Add sugar and spices and then add ghee and bhoonofy it. When the oil comes on top then put off the stove and let it rest for 10 mins. Add khoya and mix make sure the halwa is cool enough so khoya does not melt. Add any kind of nuts if u want to. Take out in a dish. Garnish with leftover khoya, nuts and edible silver foil.
