I am really excited to share with you all this Spring egg rolls recipe from Madiha Fahad. Its the first time I tried making these at home and they came out really yummy and perfect. Do give it a try and like me you will love them šŸ’•


For egg wraps mixture:

šŸ‘‰.Ingredients:

8 tbsp flour

3 tbsp cornflour

1 tsp salt or to your taste

1 large glass water

4 large egg


šŸ‘‰.Instruction:

1- Gather the ingredients.

2- In a large bowl, whisk together flour, cornflour, salt, water, and eggs until the mixture looks like pancake batter and there are no lumps.

3- Heat a deep skillet over low heat. Brushed in a bit of cooking oil or coat with the help of tissue paper.

4- Pour 1/2 a ladle of the mixture into the skillet and quickly rotate it to spread the batter across the entire bottom of the pan as you see in the video.

5- Let cook until lightly brown on the underside and then loosen the edge of the egg roll wrapper with a spatula, or knife tip.

7- Remove from the skillet onto a piece of parchment paper or waxed paper and repeat with remaining batter.


Note:

šŸ‘‰.This Egg wraps Recipe is About 21-23 rolls In small pan.

But You can use medium size pan for wraps.


šŸ‘‰.Ingredients Of

Spring Rolls mixture:


2 chicken breasts, boiled and shredded

half cabbage, julienne cut

Salt to taste

1 tsp black pepper

3-4 capsicum, small julienne cut

2 tbsp Soya sauce

2 tbsp Worchester sauce

2 tbsp chilli sauce

1 tsp vinegar

2 tbsp oil for greasing

1 tbsp flour mixture for pasting

Oil for frying


Method Of Spring egg Rolls.

1- Heat 2 tbsp oil in a pan and Add chicken and fry it till it changes it color Now add all vegetables and salt, black pepper, All sauces and vinegar .Mix it well. 2- Don’t over cook it Let it cool down.

3- Mix flour with 1-2 tbsp of water to make flour mixture for pasting

4- Take the roll sheet, Put a little of mixture on each sheet, Fold it in roll shape and seal the edges with flour mixture.

Heat the oil in wok, and fry the rolls till they are golden brown.

Serve them with your favorite dip and Enjoy!!!


šŸ‘‰.For chicken Filling Mixture:


Ingredients:

2big boneless chicken pieces

2 gloves finely minced

2-3 tbsp soy sauce

1tbp vinager

1/4 tsp freshly ground black pepper.

1-2 stalks green onion chopped(optional)

1/2 part of cabbage, shredded

3-4 big capsicums. Fine chopped.

2 tablespoons oyster sauce (optional) I used it sometimes.


oil for frying


šŸ‘‰.Prepare filling mixture:


Heat a wok or large saute pan. When hot,add in just 1 tbsp of the cooking oil. Stir fry the boiled shredded chicken until little browned. Remove browned chicken from wok to a bowl and set aside.


Wipe the wok clean and turn heat to medium. Add the remaining cooking oil. Add in the garlic,green onion, and cook for few seconds. Take care not to burn these aromatics. Now Add in the capsicum,cabbage. Stir well and turn the heat to medium-high. Stir fry the vegetables for 2 minutes, or until they have softened. Add the cooked chicken back into the wok, stir well. Add in the vinager,soy sauce, pepper ,salt,oyster sauce and toss again. For adjustment, check salt & all the spices up to your taste.šŸ‘ Now, turnoff the flame. Spread the mixture out on tray sheet to let cool.


šŸ‘‰.Frying Spring Rolls


When ready to fry, heat oil in a fry pan, or a heavy skillet.

Carefully slide in the egg rolls, a few at a time, to the oil to fry. Turn the egg rolls occassionally to brown evenly and fry for about 2-3 minutes. Let cool on butter paper, or tissue paper. Repeat with remaining.


šŸ‘‰.Important Notes:


šŸ‘‰. please don't over Cooked it so,it becomes a Crispy wrap sheet.

šŸ‘‰.To Freeze Spring Rolls:

After rolling the spring rolls (but before frying), insert them in a airtight box, Ziploc bag, or freezer bag, in a single layer. Try not to overcrowd. Close and freeze.šŸ‘šŸ™‚


šŸ‘‰.Frying Frozen Spring Rolls:

When ready to cook, you'll go from freezer to frying, no defrosting necessary. Defrosting the spring rolls will make them soggy, wrinkly. šŸ™


šŸ‘‰.This Egg wraps Recipe is About 21-23 rolls In small pan.

But You can use medium size pan for wraps.


šŸ‘‰.when all the wraps are Ready ,please set a side for dry the moisture from the egg rolls

N cover all of with the help of paper sheet or dry cloth piece.


šŸ‘‰.you can double or triple this mixture Recipe with same ratio. But This time I have made triple wraps. With the increase of ingredients amount.
