Dahi Baingan

Brinjal medium 3

Cut in your desired shape, soak them in water. Wdd 1 tbsp salt so they don't turn black.


Stir fry them in 1 - 2 tbsp oil. Give them a good colour.

Yogurt prep:

2 cups

Whisk it properly. Add 1 tsp roasted and crushed zeera/cumin dhaniya/whole corriander.


Masala preps:

In a pan heat 3 tbsp oil

Add 1 tbsp ginger garlic paste.

Now add:

Salt to taste

Haldi/turmeric half tsp

Red chilli powder and flakes 1 tsp

Roasted and crushed cumin and coriander half tsp.

Cook the masala on low flame.

Add 3-4 tbsp of water so that the masala doesn't get burnt.


Assembling:

In a deep bowl, place brinjals, pour yogurt, add your masala.

Continue doing it (give layers)


Tarka prep:

Heat 1-2 tbsp oil

Add, half tsp cumin seeds

5-6 curry leaves/curry patta

2 button chilli whole (slit them)

1 green chilli (slit)


Pour this tarka over your dahi baingan bowl.

Enjoy with roti/naan or rice! ⭐⭐⭐
