Dhaba Maash Daal Fry

Ingredients:
- Mash Daal - 1 cup 
- Minced ginger - 1 Tbsp 
- Garlic - 5 cloves 
- Oil / Ghee - To your liking but traditionally this daal is made with generous amount of Oil / Ghee 
- Onion - 1 
- Tomatoes 3 
- Salt 
- Tumeric 1/4 tsp 
- Corriander powder - 1 tsp + 1/2 tsp 
- Red Chilli powder - 1.5 tsp 
- Garam Masala - 1/2 tsp 
- Cumin - 1/2 tsp 
- Green Chillies - 6 
- Green Corriander and lemon 
Method:
- Wash Maash Daal, then add 1 Tsp minced ginger and salt and add enough water to tenderise it. Make sure that it becomes soft but not mushy, Turn off the flame when it is 90% tender. 
- Take Oil in frying pan/Karhai, Add onion and saute it 
- Prepare your tomatoes by blending them in Chopper with garlic cloves. 
- Now add this tomato mixture in frying pan and fry with oil 
- Fry it till water evaporates and you get a smooth onion tomato gravy 
- Add tumeric 1/4th tsp and dry Coriander powder 1 tsp and fry 
- Now add 1.5 tsp Red Chillie powder and fry 
- Now add your already tenderised daal 
- Fry it and then add some water to cook it with masala 
- Add green chillies while cooking. 
- Now your daal is ready, mix 1/2 tsp gram masala, 1/2 tsp corriander, 1/2 tsp crushed cumin. 
- Mix and turn off the flame. The khusboo at this point will be amazzzinnnng. 
- Garnish with julienne ginger, green chillies, green coriander and lemon juice. 
- Your Dhaba Fry Maash Daal is ready, Enjoy!! :)
