TABAHI CHICKEN BIRYANI

INGREDIENTS:

  1. Chicken - 1 kg

  2. Tomatoes - 7 medium

  3. Rice - 5 cups (Preferably Sela Rice - soaked for 3 hours)

  4. Salt - as required

  5. Oil - 1 cup or more according to liking

  6. Yogurt - 1 cup

  7. Dried plums

  8. Food Color - Orange

  9. Whole Spices: Black Pepper corns 1 Tbs; Cumin 1 Tbs; 5 Green Cardamoms; 3 Black Cardamoms, 2 Star anise; 3 small cinnamon sticks

  10. Masalay (powdered): Red Chillie power 2 Tbs (more if you like it spicier); Turmeric 1 tsp; Dhania (coriander) powder 1 Tbsp; Salt according to your taste


  11. Biryani Masala grinded to powder: 1.5 Tbs Cumin, Jaifal (nutmeg) small piece, Javitri (Mace) 2 -3 small pieces, Cinnamon 2 small sticks. Put these whole spices in your grinder bowl and grind them.

  12. Green Masala paste: 5 - 6 green chillies (more if you like it spicier); 5 cloves garlic; 1 inch piece of ginger, Blend in blender with little water to make paste.

  13. For adding to water for boiling rice: 2 star anise, few leaves Taizpaat, Salt

  14. For layering: Green coriander, Mint, Green chillies and Orange Food colour



METHOD:


For Chicken Qorma:

  1. In a big pot take oil and fry the sliced tomatoes.

  2. Add prepared Green Masala paste and fry.

  3. Add Whole Spices and Masalay (powdered) and fry.

  4. Now add 1 cup water and let it cook on slow flame so tomatoes are properly soft.

  5. Now add Yogurt, dried plums and prepared grinded Biryani Masala powder and let cook for 5 -10 min and fry.

  6. Add water if needed so your Chicken will be cooked.

  7. Add the Chicken and cook for 10 min till Chicken is 70% done.

  8. You should have some water left but not a lot.

Prepare Rice:

  1. Now boil water in another pot and add star anise, Taizpaat and Salt

  2. When Rice is 80 % done (with 3 Kani), drain the water.

Layering:


  1. On the Chicken Qorma, spread generous amount of food color

  2. Now Spread very thinly sliced round cut lemon slices

  3. Spread generous amount of green coriander and mint, and few green chillies.

  4. Spread the boiled drained rice on the Chicken Korma.

  5. Spread some more food color on top and pour some oil on the rice.

  6. Now close the lid and do Dum.

  7. First for 6 - 7 minutes keep the flame high.

  8. Then very slow flame for next 20 - 25 minutes.

Tabahi Chicken Biryani is ready and you at this stage will have the most delicious Biryani aroma in the air!! Mix it in the pot, dish it out and Enjoy with your friends and family.


Note:

  1. There are no Onions used in this recipe.

  2. Increase quantity of Red Chilli powder and Green Chillies if you like to make it spicier.

  3. You can add potatoes to the recipe if you like.
