Kabli Afghani Pulao

Ingredients:

  1. Meat - 1/2 kg or 1 Chicken

  2. Rice 4 cups

  3. Onion - 1

  4. Cumin - 3 Tb

  5. Black Cardamon - 4

  6. Tomatoes - 3 medium size

  7. Salt

  8. Oil / Ghee

  9. Carrots - 3 to 4

  10. Raisins - 1/2 cup more

  11. Garlic Ginger


Method


  1. Make yakhni (stock) by boiling meat with cumin, black cardamon, garlic ginger till meat gets tender. You should have 4 cups of stock.

  2. Fry sliced onion in oil / ghee

  3. Add some more cumin and garlic ginger

  4. Add tomatoes and fry to make a smooth gravy. Add few tablespoons of Yakhni while frying to help tomatoes melt.

  5. Add boiled meat and fry

  6. Now add stock or yakhni and bring it to boil

  7. Add rice and cook till water evaporates

  8. In the meantime saute carrots and raisins for 3 - 4 min and add a teaspoon of sugar and fry for a minute or so

  9. Now add your carrot and raisins on rice

  10. Keep on very slow dum for 20 - 30 min till the rice are fully cooked. Remember to dum on very slow flame.

  11. Your Afghani Kabli Pulao is ready!!
