Shakshuka With Suji Parathas & Rose Lassi

Shakshuka is an African breakfast/brunch dish. It’s made with a lot of tomatoes, onions and few spices.
I sautéed onions till light brown, added 1 potato, 1/2 tsp zeera pow, 1/2tsp coriander pow, 1/2 tsp salt, black pepper and red crushed pepper and 1 tomatoe. Add a bit of water so that potatoes are cooked. When water has dried, add 1/2 green capsicum and 1/2 red capsicum, few curry leaves and just give it a good stir. Break eggs over the masala and cover and simmer on medium heat so that the eggs are thoroughly cooked. I added a bit of mozzarella cheese and green corriander leaves.
Serve hot and in the pot it’s cooked.
Suji parathas
In 1 cup suji add 1/3 cup milk and leave it for few mins till the milk is absorbed, then add 11/2 cup ata, 3 Tbsp sugar, 2 tsp salt, few tsp milk powder, 1 Tbsp oil and then add water to make the dough. Leave it for 1/2 hr and make parathas and serve hot. The key is to serve hot and don’t leave parathas in a pot for long time.
For rose lassi I added pistachios, almonds, dried rose petals, yogurt, milk, almond milk, sugar, dash of salt. Everything according to ur taste
