Seekh Kabab

Ingredients:

  1. Beef boneless cubes ½ kg (with 20% fat)

  2. Lehsan (Garlic) cloves 14-15

  3. Adrak (Ginger) 2 inch piece

  4. Pyaz (Onion) cubes 1 medium

  5. Hari mirch (Green chillies) 2-3

  6. Podina (Mint leaves) 2 tbs

  7. Hara dhania (Fresh coriander) 2 tbs

  8. Baking soda ½ tsp

  9. Garam masala powder 1 tsp

  10. Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tbs

  11. Lal mirch (Red chilli) crushed 1 tbs

  12. Zeera (Cumin seeds) roasted & crushed 1 & ½ tbs

  13. Namak (Salt) 1 & ½ tsp or to taste

  14. Lal mirch powder (Red chilli powder) 1 tsp or to taste

  15. Ghee 2 tbs

  16. Cooking oil 1-2 tbs

  17. Cooking oil 1 tbs



Directions:

  1. In a bowl,add beef boneless cubes, garlic,ginger, onion, green chillies, mint leaves, fresh coriander, baking soda, garam masala powder, coriander seeds, red chilli crushed, cumin seeds, salt, red chilli powder and mix well.

  2. In a chopper, add beef with spices & chop until well combined.

  3. In a bowl, add beef mince mixture, ghee & knead well for 4-5 minutes, cover & refrigerate for 1 hour.

  4. Dip hands in water & take a mixture (55g) and make kababs of equal sizes on skewer (makes 14-15).

  5. In frying pan ,add cooking oil and fry kababs on medium flame from all sides until done (approx. 6-8 minutes)

  6. Serve with raita!


Tips: As you fry your seekh kababs, wrap them in foil, this will keep them moist, you can also drizzle some lemon juice which helps them stay soft and moist.


Server on a bed of fried sautéed onion, mint raita and parathas and enjoy :)
