RED VELVET CUPCAKES

INGREDIENTS: - 1 + 1/3 cups All Purpose Flour - 1 + 1/2 tbsp Cocoa Powder - 1 + 1/2 tsp Baking Powder - 3/4 tsp Baking Soda - 1 cup Sugar - 3/4 cup Buttermilk or Milk - 1 tbsp Vinegar - 150 gm Butter (Softened) - 3 Eggs - 1/2 tsp salt - Red food colour - 2 tsp Vanilla essence


INSTRUCTIONS: *Make sure all the ingredients are at room temperature for best results. ▪️Sift the flour with the cocoa, baking soda & baking powder twice and set aside. ▪️ Add vinegar to milk and let it stand for 5-10 minutes. Milk plus vinegar is nothing but buttermilk. ▪️ Grease and line an 8″ round pan or prepare your cupcake pans or silicone cups. Preheat oven to 170 C. ▪️ Beat the butter with the sugar until light and creamy. Then add the eggs one at a time, beating well after each addition. Do not over mix. ▪️Add the Red food colour and Vanilla essence. Mix well. ▪️Add the Buttermilk and Dry ingredients. Mix till all the ingredients are well combined. ▪️ Pour into prepared pan. Bake for 25-30 minutes for a big cake or 15-20 minutes for cupcakes, or until a toothpick stuck in the center comes out clean. ▪️Remove from pan and let cool completely before frosting. ▪️ Frost the cupcakes with Cream cheese Frosting.

CREAM CHEESE FROSTING INGREDIENTS: - 100 gm Cream Cheese - 1 cup Whipped Cream - 1/2 cup Icing Sugar - 1/2 tsp Vanilla essence INSTRUCTIONS: ▪️ In a small bowl beat whipping cream until stiff peaks form, set aside. ▪️ In a large bowl combine cream cheese, sugar and vanilla. Beat until smooth, then fold in whipped cream.
