Recipe Prep: 20 minutes Cooking time: 20 mins Resting: 2 hours Yield: 12 pav Ingredients: 1 cup milk (warm) 1/4 cup water (warm) 2 tsp sugar
7 grams dry yeast
2 tbsp yogurt or quark
3 cup (450 g) flour or spelt flour
1/2 tsp salt
2 tbsp butter (softened at room temperature) 2 tbsp milk (for brushing)
Method: For activating yeast, in a bowl add the yeast by combining milk, water, sugar and 7 grams dry yeast. Keep it rest with covered lid for 10-15 minutes. Until foamy. In a large mixing bowl, add 3 cup flour and ½ tsp salt. Then add yogurt or quark (this give elasticity & milky texture to pav. Add yeast mixture and knead until the dough turns soft. Then, add 2 tbsp butter and knead the dough. Cover the dough with cloth properly,keep it rest 1 hour in a warm place. Later, punch the dough and knead it slightly to remove air incorporated. Make equal balls from the dough and place the balls into a greased tray. Brush little oil and cover it, again leave them for 1 hour to rise. Then brush the balls with milk with out apply hard pressure. Bake at 180 degree celcius preheated oben for 20 minutes, or until the pav turns golden brown from top. Remember: Once the pav is out of the oven, rub with butter to get a shiny look. Cover with a wet cloth to get a super soft cloth and allow to cool completely.
