Very simple jhatpat flavourful recipe.
Ingredients
Okra 500gms washed and cut
Tomatoes 3 large
Kari leaves 10
Mustard seeds 1/2tsp
Onion 1 medium
Green chillies chopped 1tbsp
Ginger 1tsp
Crushed and roasted cumin and corriandar seeds 1tbsp
Roasted and crushed red button chillies 1tsp
Salt to taste
Fenugreek leaves 1tsp
Oil 4tbsp ( i use mustard oil for vegetables)
Method
Heat oil add karri leaves , mustard seeds and ginger sautee them now add onion and fry them for till light golden now add tomatoes finally chopped and all the spices cook it for 5mins , add okra and cook it for 12-15mins .
Don't cover the lid while cooking okra
Add fenugreek leaves in the last and serve with daal chawal, naan ,chapati or paratha
