BANANA LOAF/ BREAD

Ingredients:
- 1 + 1/3rd cups Plain Flour 
- 2 Eggs 
- Half cup Sugar 
- Half cup Oil 
- 1 teaspoon Vanilla Essence 
- 3 Bananas, mashed 
- 1 teaspoon Baking Soda 
- 1 teaspoon Ground Cinnamon 
- Salt a pinch 
- Chocolate chunks/walnuts/any dry fruit of your choice. 
Method:
- Preheat oven to 150°C. 
- Grease and line base of a loaf pan or cake tin. 
- Sift together the flour, cinnamon, baking soda and salt together in a large bowl and keep aside. 
- Beat eggs and oil together on medium-high speed for 5 minutes. 
- Reduce speed to low add powdered sugar, Mix in the vanilla and add the mashed bananas. Beat for another minute till well combined. 
- Now add the dry mix to the wet mixture, fold gently but thoroughly. 
- Pour the mixture into the loaf pan, top with nut or chocolate or Bananas and bake for 1 hour, or until the skewer comes out clean when tested.
