Quick Tiramisu

INGREDIENTS
- Heavy whipping cream 4 cups 
- Cream cheese 8 oz (I used Philadelphia brand) 
- Powder sugar or icing sugar 3 cups + 2 tbsp extra 
- Italian Lady fingers biscuits 5 single packs (60 pieces total) 
- Water 3 cups 
- Vanilla essence 2 tsp 
- Coffee essence 1/2 tsp 
- Instant coffee 3 tbsp 
- Unsweetened Cocoa powder for dusting as needed like 4 to 5 tbsp 
DIRECTIONS
- Beat heavy whipping cream until thickened. Add softened room temperature cream cheese and beat well together with whipping cream. Add powdered sugar and mix well. Add instant coffee, vanilla and coffee essence and beat together until combined. 
- In a separate bowl, put 3 cups water plus 1 tbsp powder sugar and 1 tbsp instant coffee and mix well until dissolved. 
- Quickly and fully dip lady fingers in coffee water mix for a second. (If you dip for too long, it will become too soggy). Arrange a layer in lasagna dish. Then add the cream cheese mixture and dust cocoa powder using a coffee strainer. After finishing the layer, continue dipping lady fingers in the coffee water mix, layer on cream cheese mixture and finally dust with cocoa powder. 
- Refrigerate overnight and enjoy. 
NOTES
- Don’t use regular pure cane sugar as it will leave water behind in dessert. Must use store bought powder sugar as it has cornstarch in it. Adjust the sweetness to your liking. 
- I used 60 Italian lady finger biscuits. 
- You can substitute cream cheese for mascarpone cheese for a lighter texture. I don’t like to use mascarpone cheese since it’s expensive. I find using cream cheese with coffee and vanilla to be really tasty. 
- I used a large lasagna tray and am able to make two layers of lady finger biscuits.
