I have recreated the recipe with little innovation and made this without meat Try it & TAG Foodistan_travels


Recipe: āœšŸ¼ Prepartion Time: 30 minutes Cooking Time: 1 hour 30 minutes Serve: 4-6 persons

INGREDIENTS: šŸ‘‰For dough: 2 cup All-purpose flour 1tsp sugar 1 tsp salt 4 tbsp milk 1tbsp yogurt (optional) Warm water for kneading šŸ‘‰For vegetables curry: 1cup carrots 1 cup peas 1 cup potatoes (diced) 1/2 cup kidney beans 1/2 cup Oil 1 cup Onion 1/2 cup tomato paste 1 tbsp Ginger paste 1 tbsp Garlic paste 1/2 tsp Black pepper 1/2 tsp White pepper 1/2 tsp cardamom powder 1/2 tsp Garam masala 10-15 cloves 1-2 Cinnamon stick 2 Bay leaf 1/2 inch nutmeg šŸ‘‰For rice: 400 g Rice (soaked) 2 tsp Salt 2 Bay leaf šŸ‘‰For garnish: Fried onion as required 1/2 cup Coriander leaves (chopped) 1/2 cup Fried almonds 1/2 cup Fried walnuts 1 cup caramelized carrot (grated) Saffron mixed in water (as required) Melted butter for greasing Nigella (kalonji)seeds (as required)

METHOD: šŸ‘‰For dough: In a bowl add flour, salt and mix. Add oil, yogurt and warm milk then knead the dough. Add water as required. Set aside. šŸ‘‰For Vegetable Curry: In a pan heat oil, add onion and cook until translucent. Add ginger garlic paste and cook for 1-2 mins, then add tomato paste and all the spices. Cook it for 4-6 minutes. Now add all the vegetables and beans then cook until it changes color. Then add another half cup of water, cover and let it simmer for 10 to 50 minson low flame. Take it off the flame. Set aside. šŸ‘‰For rice: Boil water in a pan, add cumin, salt, bay leaf. Add rice and cook them cook on low flame until 70% cooked. Assembling: Roll out the dough into a large disk in round shape. Grease a round deep pan with melted butter, sprinkle nigella seeds. Put the dough in pan, covering all the sides properly. Now make layers with rice, vegetable gravy and coriander leaves. Sprinkle almonds, walnuts, carrots, saffron water on top. Cover it with dough. Bake in a preheated oven at 180 degree for 20 to 30 minutes or until golden.
