NO BAKE MANGO MOUSSE CHEESE CAKE

INGREDIENTS

  • 3 cups crushed Oreo cookies or digestive cookies or Marie biscuits

  • Melted butter 5 TB

  • Cream cheese 8 oz

  • Heavy cream 2 cups

  • Powdered sugar 1 1/2 cups

  • Mango essence 1 1/2 tsp

  • Mango purée 1 1/2 cup or 4 mangoes cut and puréed

  • Halal gelatin by Ross 3 tbsp

  • Water 1/4 cup to dissolve gelatin 

  • Yellow food coloring 2 drops

  • Mango or Apricot jelly for top layer 

  • Any fruits for decoration 

  • Spring form pan 9 inches


DIRECTIONS

  • Follow instructions on gelatin packet. Dissolve gelatin in warm water and keep it aside.

  • Crush cookies in a chopper and mix melted butter.

  • Line only the bottom of the springform pan with wax paper. Grease pan well and place in fridge for 15 minutes to set.

  • Beat heavy whipping cream then add soften cream cheese and mix well.

  • Add sugar, mango purée, essence and dissolve gelatin and mix well 

  • At this point taste the sweetness, for me it is a perfect sweet u can add 1/2 cup more if mangoes are sour.

  • Take out pan from fridge and pour all the mixture in the pan and tap few times to make it even.

  • Again put back the pan in the fridge to set it will take 6 to 8 hours.

  • When mousse is all set make apricot or mango jelly in 1 cup of hot water, when little cooled then pour on top of mousse for a nice glazed layer and again put back in fridge till layer sets.

  • Top with any fruits.


NOTES

  • If u don’t have a springform pan, then you can make it in any glass bowl so you can see the crust.

  •  I used canned mango puree.
