Mango Tres Leches Cake

Ingredients


4 eggs

1/2 cup sugar

1 cup All purpose flour

1/2 tsp baking powder

1/2 tsp vanilla essence


Beat the eggs with sugar until very fluffy amd double in volume and very light in color. Add vanilla essence mix. Now add baking powder and flour in beaten eggs and fold gently until fully incorporated. In a baking dish 8×8 pour the mixture and bake on 180 c for about 30 min, or toothpick inserted comes out clean.


Note: oven should be preheated on 180c 10 min before baking.


Topping

1 can evaporated milk 200ml

I can condensed milk 200ml

1 packet cream 200ml

1/2 mangoes puree


Mix them all very well in a jug.


When cake ia fully baked let it cool to room temperature. When cool scortch the cake with the help of toothpick or fork. Add the milk mixtyre slowly so that cake ia fully soaked in. Put the cake in refrigerator for ideally overnight. Otherwise 3 to hrs.


Cake glaze


1 cup mango purree

1tsp suger

1/4 cup water

1 tsp corn flour

1tbsp watee to dissolve corn flour


In a pan add manho purree, water and suger and cook the mixture for 5 min on very low flame. Now add corn flour mixture and cook untill purree is thick.


1 cup heavy whipping cream

2 tbsp icing sugar

1 cup mango chunks


Whip the cream with icing sugar until thick. Add chunks to cream mixture.


Spread the cream over the cake evenly and on top pour mango glaze gently all over and with the help of toothpick make design.


This cake is super tasty believe me especially in summer.
