Mango Cake

INGREDIENTS
4 eggs
100gm all purpose flour 1 tsp baking powder 100gm sugar 1tsp vanilla essence
Beat the eggs with sugar untill double in volume nd very light in colour. Add vanilla essence beat. Now add flour in three steps using spatula, fold in eggs mixture by using cut and fold method so our cake do not deflate. Bake on 180c for 25 to 30 min or skewer comes out clean. When baked cool them on cooling rack for an hour.
For glaze 1 cup chopped mangoes 2 tbsp sugar 1/4 cup water 1tsp cornflour 1tbsp water to dissolve cornflour In a saucepan add water nd sugar, cook until sugar is completely dissolved.
Add mango chunks and cook and when soft add cornflour and remove form heat when thick and transparent in colour.
For decoration Whipping cream 400ml chilled 2 tbsp icing sugar Few drops vanilla essence 1 cup mango chunks 1/2 cup cold milk
Beat cream with sugar until fluffy. Add vanilla essence mix. When the cake is completely cool down.
With the help of serrated knife cut for center.
Now place the bottom layer on a plater and soak it with milk than pour glaze and spread and pour cream and spread evenly.
Now place the top layer on it and repeat the process by soaking with milk.
Now spread cream with the help of offset spatula evenly on top and sides.
Using star nozzle and piping bag create roses on top and put mango chunks in center. Very refreshing cake in summer.
