Lemon & Rosemary Chicken Roast

Ingredients 1 whole baby chicken with skin 1tsp salt 1tsp crushed black peppers 1tsp lemon zest 1 lemon whole juice 1tbs rosemary fresh cut thinly 1tbs oil 1tbs garlic & ginger paste 2or3sprigs of fresh rosemary 1whole onion & lemon wedges for filling

Method: Wash the whole chicken & pat dry it & keep it in the baking dish

In a bowl mix salt, black pepper,lemon juice & lemon zest,oil, garlic &ginger paste, 1tbs rosemary & mix well Marinate the chicken inside skin & rub well on both sides of the chicken. You can use your fingers to rub the marination inside skin but do it gently. Keep the marinated chicken for at least 2 hours Then cut the whole onion 🧅 in 4/8 slices & few lemon wedges & fill the chicken with onion, lemon wedges & rosemary sprigs. Marination has released juices & when you will bake it will help not to dry out. Bake at 180c for about 45 to 50 minutes depends on your oven . Roast chicken is ready & you can eat with salad & plain rice!
