This is a quick version. You can double the quantity if making for more people. This is good enough for 5-6.
1 lauki grated, 1 can evaporated milk, full cream milk11/2 cups, nido powder 2Tbsps, green cardamom pow 1 tsp, 1/2 Tbsp ghee, 3/4 cup sugar or according to taste, dash of salt, tapioca 3Tbsp. (I had instant powdered tapioca so added that) few drops green food color.
In a saucepan add the grated lauki and give it a few stirs till the water evaporates and it looks drier, add the rest of the ingredients and slow cook till u get the desired consistency and keep stirring it frm time to time so the milk doesn’t stick to the pan as u would in any kheer.
Garnish with edible silver foil, almonds, pistachios and dried rose petals(optional)
