Ingredients:
1 Litre Milk (whole fat)
6-8 tbsp lemon juice
100 g sugar
2 tbsp ghee
4-5 tbsp warm milk
1 tbsp rose water
1/2 tsp cardamom powder
2 tbsp pistachios (thin wedge)
Method:
Take a cooking pot and add milk. Heat the milk until boil. Add lemon juice and turn off the flame.
Let the milk cool on the same pot. Now drain the 75% of water and the remaining 25% water and spilt milk on the same pot. Add cardamom powder.
Cook it on medium to high heat until water evaporates. Now add sugar and ghee and cook. Stir in one direction.
Cook for almost 15 minutes (depending on the quantity) add milk and rose water then stir. Turn off heat. Kalakand sweet is ready to spread.
Spread the Kalakand mix into a greased square pan. Sprinkle pistachios.
Keep it aside and allow it to cool at room temperature for at least 3 hours.
