IRANI CHELO KABAB PLATTER 🌶🌶

Ingredients for kabab

Chicken boneless ( I prefer thigh) 500gms ( you can take mutton or beef mince too)

Onion 1 large

Corriandar leaves 2tbsp

Green chillies 4

Ginger 1 small piece

Lemon juice 4tbsp

Garlic 10 cloves

Salt to taste

Black pepper crushed 1/2tsp

Red chilli powder 1tsp

Crushed red chillies 1tsp (optional)

bread 1 slice

rice flour - 1.5 Tsp

Saffron few strings


Method


In chopper add onion garlic ginger corriandar leaves green chillies and chopperize them

Now add chicken boneless pieces in same chopper ( onion mixture ) with salt pepper lemon juice and saffron (dissolved in 1tbsp warm milk ) chopperize them well


Take out from chopper make kababs grill it or shallow fry in butter


Grill out some tomatoes and onions in same grilled pan


Ingredients for chelo ( rice )


Basmati rice 1/2kgs soaked

Chicken stock 2cups

Saffron few strings

Salt as per taste

Butter 4tbsp

Oil 4tbsp


Method


Heat oil add chicken stock saffron salt bring it to boil add soaked rice

When water dries out partially , add butter and let it simmer for 10mins on low flame.


Serve hot with kababs and grilled veggies and Mandi Sauce


For Mandi Sauce:


-In grinder,add green chilies,garlic,coriander seeds,salt,curry powder,fresh coriander,lemon juice, tomatoes,water and grind well.
