4lb beef
2 Tbsp salt
2 Tbsp red chili powder
2 Tbsp cumin powder
1 tsp nutmeg
1tsp mace
1 tsp meat tenderizer or 2Tbsp raw papaya
4Tbsp jaggery powder
1 Tbsp ginger&garlic paste
3 cups vinegar
1 cup oil
2 cups water
1 tsp dissolved in water pink curing salt or salt Peter, sprinkle little bit on the marinated beef and discard rest.
Mix all the dry ingredients. Put cut in the beef and rub the dry spices and g.g
Tie it with a kitchenette twine.
Pour wet ingredients except pink curing Salt, sprinkle a little bit and discard rest don’t put all of it.
Marinate for 3 days.
On third day I steamed in instant pot otherwise u can pressure cook. Original recipe calls for steaming the beef. After it’s tender fry both sides of the beef on a pan to give a nice color. Enjoy as breakfast meat or in sandwiches or burgers or just with rice.
