GAJAR HULWA

Everyone's favourite, this delicious recipe is just easy to make and the Carrot Hulwa is absolutely delicious, this is a winner recipe that you will want to make again and again!!

INGREDIENTS:


  1. Carrots - 4 kg

  2. Sugar - 2 Cups

  3. Oil / Ghee - 1 Cup (you can take 50:50 oil and Ghee if you like)

  4. Cardamom - 6 - 7

  5. Khoya / Qaladand - 1\2 kg



METHOD:


  1. Peel and grate carrots.

  2. Take a big pot and put all the grated carrots in it and put it on stove on high flame.

  3. Cover the pot and let cook for 5 - 8 min.

  4. Reduce the heat a bit, keep stirring occassionaly and keep cooking.

  5. Keep stirring and cooking till ALL the water evaporates and you are left with just carrot pulp. You have to be patient here as it can take some time to reach this stage.

  6. Once all the water has dried, you are now ready to put the Sugar.

  7. Add your sugar and you will notice the sugar released water. Now keep stirring and cooking till all this sugar water is dried.

  8. Take your Oil/Ghee in a frying pan, heat it up and put cardamoms to fry a bit.

  9. Now pour your Oil/Ghee on the Carrot hulwa (like a bhagar).

  10. Once again keep stirring and cooking till your hulwa binds and come together and oil gets seperated.

  11. Turn off the flame.

  12. Now add some crumbled Khoya / Qalaqand and gently mix it. Do not overmix otherwise your Khoya will disappear.

  13. Dish out your Carrot Hulwa.

  14. Generously spread a layer of Khoya / Qalaqand on the Carrot Hulwa.

  15. Garnish with nuts.

  16. Your delicious Carrot Hulwa is ready, Enjoy :)

Note: Some Carrot hulwa recipes require boiling carrots in milk, this is not required in this recipe and in my view the method given in this recipe is better as it retains the original flavours of carrot. Also if you add milk it will take much longer for the hulwa to come together and release oil.
