Creamy Flake slice

Ingredients:

250g Choc Ripple biscuits

100g butter, melted, cooled

2 1/2 teaspoons gelatine powder or agar agar powder

500g cream cheese, at room temperature, chopped

100g (1/2 cup) caster sugar

300ml thickened cream

Cadbury Flake bars

Method:

Crush up the biscuits with melted butter until just combined. Transfer the mixture to the prepared pan. Spread and press the biscuit mixture firmly over the base of the pan. Place in the fridge for 30 minutes or until firm.


Place 2 1/2 tablespoons water in a small bowl and sprinkle with the gelatine or agar agar powder. Set aside for 2-3 minutes to soften. Microwave on High for 20 seconds or until warm. Use a fork to whisk the mixture until dissolved. Set aside to cool slightly.


With electric beater, beat the cream cheese and sugar in a large bowl until smooth. Add then and cream. Beat until just combined. Beat in gelatine mixture until combined.


Pour the cream cheese mixture over the biscuit base and smooth the surface. Sprinkle flake on top and place in the fridge for 3 hours or until set.
