Wings marination
Take 1 kg wings ( mine was with out skin) , 1 tbsp garlic paste , salt 1 tsp, vinegar 2tbsp, green chilli paste 1tbsp , 1/4tsp baking soda and 2 cups water .. marinate and leave it for 2-6hours ..
Dry Coating mix
In a dry bowl add 1 cup all purpose flour, 1 cup corn flour or rice flour , garlic powder 1tsp, onion powder 1tsp , paprika powder 1tsp , salt 1/2tsp mix and keep aside
Now take each wing dip into dry mix and coat it well , shake off the excess and put it on wire rack or tray .. ( if you want more crispy layer repeat the procedure of coating ).
Deep fry the wings till crispy and golden.
For sauces ..
Honey mustard sauce..
Take 1 cup Mayonaise,1tsp mustard sauce, 1tsp honey , white pepper 1/8tsp, chopped Jalapeños (optional but I like the flavour) 1tsp mix it .. and coat the sauce on fried wings.
Buffalo sauce
In a sauce pan add tbsp butter let it melt add 1cup hot sauce and cook it for 10mins on low heat ..
Cool it down and coat it over fried wings
Sticky chilli sauce
In a sauce pan add 1tsp butter, 2tbsp brown sugar, 1tbsp soya sauce , 1/2tsp Crushed red chilli cook for 2mins .. cool it down and coat it over the fried wings .
