Chicken Mandi is a Saudi Arabian dish of Chicken + Rice where Chicken is steam cooked and is so tender that the meat is literally falling of the bones.
It is extremely delicious and delicately aromatic and definitely something to try if you are in a mood to try chicken stream roast with a difference.
I donāt have a steamer unit like used by food fusion so i made my own steam unit by putting my steel colander on a pot so it fitted the rim and covering the top properly with foil so that no steam leaves it. So use your imagination on how you can make your own steamer if you like me do not have it.
Also the recipe I have adapted accordingly so instead of the Food fusion method to put rice and chicken in steamer and put everything in oven, i instead cooked the chicken in my custom made steamer and used the yakhni it generated to cook my rice and then at the end I put my cooked chicken with rice on dum to get the flavours infused.
Recipe is a bit long and laborious so if you are in mood of some mehnat to spend time on something that gives good results then do try it. Good luck!!

Ingredients:
-Sabut dhania (Coriander seeds) 1 tsp
-Zeera (Cumin seeds) 1 tsp
-Darchini (Cinnamon sticks) 2-3
-Laung (Cloves) 2-3
-Hari elaichi (Green cardamom) 3-4
-Zafran (Saffron) ¼ tsp
-Namak (Salt) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Whole chicken with skin 1 kg
-Cooking oil ½ Cup
-Pyaz (Onion) slices 1 medium
-Cooking oil 2 tbs
-Badam (Almond) peeled 10-12
-Cooking oil ¼ Cup
-Hari elaichi (Green cardamom) 3-4
-Darchini (Cinnamon sticks) 2-3
-Laung (Cloves) 2-3
-Pyaz (Onion) chopped 2 medium
-Kishmish (Raisins) ¼ Cup
-Chawal (Rice) basmati 1 & ½ Cups (soaked)
-Pani (Water) lukewarm 3-4 Cups or as required
-Namak (Salt) ½ tbs or to taste
-Koyla (Charcoal) for smoke
-Pyaz (Onion) fried
-Badam (Almonds) fried
-Hara dhania (Fresh coriander)
Mandi Sauce:
-Hari mirch (Green chilies) 3-4
-Lehsan (Garlic) cloves 2-3
-Sabut dhania (Coriander seeds) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Curry powder 1 tsp
-Hara dhania (Fresh coriander) ¼ Cup
-Lemon juice 1 & ½ tbs
-Tamatar (Tomatoes) 2 medium
-Pani (Water) 1-2 tbs or as required
Directions:
1. In spice mixer,add coriander seeds,cumin seeds,cinnamon sticks,cloves,green cardamom,saffron,dried lemon,salt,turmeric powder,grind well & set aside.
2. In bowl,add whole chicken,cut with the help of the kitchen scissor and break the back bone of the chicken.
3. Now add whole ground spices and rub evenly on both sides,cover and let it marinate for 4 hours to overnight in refrigerator. Reserve some masala to be used for later. You can give koyla dum at this stage but I made with out it.
4. In frying pan,add cooking oil and onion,fry on low flame until golden brown & set aside.
5. In frying pan,add cooking oil and almonds,fry until light golden & set aside.
6. In pot,add cooking oil,green cardamom,cinnamon sticks,cloves and mix well.
7. Add onion, mix well and fry until light golden.
8. Turn off the flame, add raisins and mix well.
9. Add rice, salt and mix gently.
10. Take a metal colander and place it on top of pot so that it fits on the top. Pour some water in the pot and place your chicken in the colander. Cover it up with foil.
11. Now put it on the stove on medium flame and let it cook for 15 min, transfer the whole unit to oven and cook for 40 - 50 min till the chicken is fully done.
12. When chicken is done, remove the colander and put the water in your rice pot, add a chicken cube and adjust the amount of water according to your quantity of rice and cook rice like you do for pulao.
13. Once rice is done before giving it dum put some lemon juice and reserved Mandi masala on the chicken and place it on rice and give it dum.
14. When it is ready dish out rice then put chicken in the middle and surround by roasted fried onions, roasted almonds and raisins and sprinkle some mandi masala for khushboo.
For Mandi Sauce:
-In grinder,add green chilies,garlic,coriander seeds,salt,curry powder,fresh coriander,lemon juice, tomatoes,water and grind well.
-Serve mandi with mandi rice,mandi sauce and garnish with fried onion,fried almonds and fresh coriander.
