Mandi is an Arabic cuisine made by Mutton or Chicken, which is cooked by steaming and served with smoked flavour riceš¤©

Ingredients
500 g Chicken (with bones)
Mandi spice powder:
1 tbsp cardamom (Elaichi) Powder
1 tbsp cloves (Laung)
1/2 tbsp black pepper
1/2 tsp nutmeg powder
1/2 tsp dry ginger powder
1/2 tsp cinnamon powder
1 tsp salt
2 tbsp oil
2 tbsp lemon juice
1 piece charcoal
For Rice:
300 g basmati rice
3 bay leaves (tej patta)
A large piece of charcoal
2 -3 cardamom (Elaichi) Pods/Seeds
2-3 cloves (Laung)
2 inch cinnamon Stick (Dalchini)
4-6 Whole Black Peppercorns
Salt , to taste
šFor Garnishing:
1/2 cup fried brown onions
1 Green Chilli
1/2 cup raisins
2 tbsp fresh coriander (chopped)
šMethod:
šFor Chicken:
Take a bowl, add all the spice of Mandi, mix it with oil and lemon juice.
Make a cuts on chicken.
Marinate the chicken for alteast 2 hours or for best results marinate it over night.
Now, Pre-heat the oven at 180 Celsius.
Take a steamer, place chicken and put it in oven for 1 hour at 150 Celsius.
Once the chicken is done remove the chicken and take out the broth in a bowl. Keep it aside.
šFor the rice:
Wash and soak basmati rice for at least 30-60 minutes in hot water.
Then, heat oil in a large pot on medium heat, and fry the onions.
Add whole spices mentioned above, and roast it with onions. Then add rice and chicken broth.
Add yellow food colour of you want yellow rice.
Add water and cover the lid. Cook it for 10-12 minutes on medium to high heat.
Now, when the rice become 75 % done. Add chicken and steam it for 10-15 minutes on low heat.
Then, burn a charcoal. MaKe an Aluminium bowl, add charcoal, drizzle oil and cover it quickly. Leave it for 10 minutes.
Remove the charcoal, and start making a platter.šAssembling:
Take a large round dish. Add rice then over the rice add chicken.
Sprinkle fried onions to raisins.
Add coriander and chili on the top.
