Chicken Biryani

Ingredients :


Basmati rice

Chicken

Potatoes

Tomatoes

Onion

Green chillies

Ginger garlic paste

Oil

Sabit garam masala

Salt

Red chilli powder

Tumeric powder

Corriander powder

Cumin

Garam masala powder

Aloo bukharay

Yogurt

Kewra water

Zarday ka rang


Method:


-Boil soaked basmati rice, with oil, salt and sabit garam masala ( taiz paat, zeera, and bari elachi)

-soak aloo bukharay in water and keep aside

-when its 3/4 done, strain and keep aside.

-Fry sliced onion with sabit garam masala.

-when onion turns light brown, add ginger garlic paste and chicken.

-Fry till chicken changes color.

-add sliced tomatoes, and add salt, chilli powder haldi powder, zeera and dhaniya powder.

-mix well, give a splash of water, let tomatoes get soft.

-now mix well, add yogurt, and green chillies.

Cook it chicken is almost done.

-Boil potatoes, with salt and zarday ka rang, when they are near to done, strain and keep aside.


Layering :


-First pour all the chicken qorma in a big pateeli.

-sprinkle garam masala powder.

-now place potatoes.

-add soaked aloo bukharay ( without water).

-optional sprinkle chopper corriander and mint leaves.

-now cover it with boil rice.

-sprinkle kewra water and zarday ka rang on top.

-cover it with lid.

-First keep it on dum, high flame for 8-10 minutes, then low flame for 20 minutes.
