Chicken Biryani


INGREDIENTS:


Home made Biryani Masala:


roast dry

Red chillies ,

fennel seeds

star anise

Nut meg

Mace

Green cardomons

Cinnamon stick

Cloves

Dhaniya seeds

Jeera seeds

Bay leaf

Dried plums

and grind them and keep in air tight container that is my homemade biryani masala ...


Garnish : slice lemon and tomatoes and fry onions and put aside ...


METHOD:


1. Fry onions and cook until brown in oil


2. Add fresh garlic and ginger I crush mine in pestle and mortar it brings out the taste more


3. Once Onions brown add

Chilli powder

Salt

Haldi

dhaniya powder

Jeera powder and 2/3 tablespoon of homemade biryani masala depending on how spicy you want it to be , (biryani is no biryani unless it’s spicy so I would go for 3 big tablespoons ) 4. add Grinded tomatoes , and yougurt mix well until the masala releases oil add 2/3 tablespoon of lemon juice ...


5. Add chicken and cook well till masala release oil , add kasuri methi and fresh dhaniya and put on low heat to cook , make sure the masala remains thick and creamy ...


6. Boil rice ...


7. Once rice boiled start layers


a) Rice at the bottom

b) Chicken masala in middle and add sliced tomatoes , sliced lemon fresh coriander green chilles, fresh dhaniya and fried onions just a little

c) Then layer with rest of the rice add some yellow food colour mixed in water slightly, then


8. Sprinkle on the top the rest of the fried onions , some fresh dhaniya and lay out sliced tomatoes and sliced lemon ... put on dhum for 10 mins ...


Walahi came out the lick😋🤣
