💥CHICKEN AND CHEESE STUFFED BUNS

Inspired by Siddiqui Humera post yesterday, tried this recipe for buns from Shumyla Shoayb and for filling & assembly used Food Fusion recipe, and the buns came out really nice and yummy 😊👌
For Buns
INGREDIENTS
4 cups maida
1 × 10gms sachet instant yeast (3 tsp or 1 tbsp of yeast )
3 tbsp castor sugar
1 level tsp salt
1/2 cup oil
1 cup water
1 cup milk
METHOD
- Put dry ingredients together and mix using a whisk.
- Add in oil, mix with a whisk again.
- Take the milk and water together in a measuring jug and warm it for 1 min.
- Use this milk and water mixture to make a soft, non sticky dough, add 1 and 1/2 cup then add v slowly, be careful, you might not need all!
- Knead well for 5 more mins.
- After your dough forms, coat surface lightly with oil and keep to rise for an hour or more.
For Filling:
Chicken Filling:
-Cooking oil 1-2 tbs
-Pyaz (Onion) chopped 1 medium
-Chicken boneless small cubes ½ kg
-Adrak (Ginger) chopped 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Soy sauce 1 tbs
-Mustard paste 1 tsp
-Tomato ketchup 2-3 tbs
-Mozzarella cheese grated ½ Cup or as required
-Cheddar cheese grated ½ Cup or as required
Prepare Chicken Filling:
-In frying pan,add cooking oil,onion and sauté until translucent.
-Add chicken and mix well until changes color.
-Add ginger,garlic powder,salt,black pepper powder,red chili powder and mix well.
-Add soy sauce,mustard paste and tomato ketchup,mix well,cover and cook on low flame for 5-6 minutes then cook on high flame until moisture is reduced.
-Let it cool down.
-In chopper,add cooked chicken,chop coarsely & take out in a bowl.
-Add mozzarella cheese,cheddar cheese,mix well & set aside.
Assembling the Buns:
-Grease hand with oil,take a small dough,make a ball and roll out with the help of rolling pin.
-In the center of the dough,add chicken filling,press and seal all edges.
-On baking tray,spinkle flour and place prepared buns (makes 8-10).
-Cover and let it rest for 10 minutes.
-With the help of the brush,apply egg on prepared buns and sprinkle sesame seeds.
-Bake in preheated oven at 180 C for 25 minutes.
