Recipe By - Humera Siddiqui
INGREDIENTS:
1. Chicken 1.5 kg 2. Rice 5 to 6 cups(soak prior to 1/2hr) 3. Onion 3 medium cut in slices+ 4. 1 small onion thinly sliced for baghar at the end. 5. ginger garlic paste 2 heaped tabsp 6. tomatoes 5 medium roughly chopped . 7. green chillies 4 to 5 8. Allo bukharay soaked in water 9. oil
Dry ingredients: 1. lal mirch powder 2 tsp or as per taste 2. dhanya powder2 tsp 3. haldi powder1/2 tsp 4. 1 tabsp bombay shan biryani+sindhi biryani.(This really enhance the flavor,but if you dont want to add you can omit) 5. whole garam masala which includes cloves,black pepper corns,cinnamon sticks,small and black cardomoms. 6. dhanya ,zeera,1 tsp each sautee and grinded 7. jaefal javitri 1/2tsp 8. Star Anis (badyan kay phool)4 grinded 9. saunf + choti elachi grinded 1 tsp 10. yogurt 1 cup 11. Green dhania 1cup 12. podina 1/2cup 13. hari mirch 4 to 5 (small ones)or as per taste
Blend all above 4 ingredients together. 14. yellow color mix with kewra and water.
Method: 1. Take a pot and put oil in it. Add whole garam masala.
2. Now add sliced onion. when onions are brown add chicken and gg paste, stir till chicken changes color.
3. Now add chilli powder, dhanya powder and haldi powder.bhoonafy. At this stage you can add shan masala. 4. Add tomatoes and cook till they get soft.
5. Now add yogurt grinded with dhanya podina and hari mirchain. Mix well.
6. Cook chicken till tender.
7. Now add bhoona pisa zeera ,dhanya ,jaefal javitri. Bhoonafy.
8. Add whole green chillies, Aloo bukharay too.
9. when oil separates and chicken is ready, now add saunf +elachi powder and turn off the stove. 10. Take a wide pot for boiling rice and layering. 11. Boil water with salt ,tezpata, long, elachi, small,bari elachi,and cinnamon stick.
Add 2 tbsp vinegar too.Boil rice to 1 kani. 12. Drain, sprinkle a little cold water. This will keep your rice not to be sticky. 13. Layer first with rice than biryani masala and than rice.
Also add bari hari mirch in layers.
14. Pour color mixture too in every layer.
15. End the layering with rice.
16. Top with onion baghar. Give dum for good 10 min.
