Beef trotters 1kg


For paya Method


Wash and clean trotters

Take a pan add 4 cups water crushed ginger 1 medium ,1 raw onion medium, 1bay leaf small,cinnamon stick 1,6cloves put washed trotters 1tsp Turmeric powder and boil them on medium heat for atleast 6-8hours


Ingredients for paya masala


Fennel seeds 1 tbsp

White cumin 1 tsp

Star anise 1

(1bay leaf small,5cloves,8 black pepper corn,1cinammon stick,6green 2black cardamom ,nutmeg n mace 1/2tsp,8black Pepper corn)

Black cumin 1/2tsp

Pipri 1/4tsp (piper longum)


Method for masala


Dry roast above all

Grind them. Keep aside.


Other ingredients


Coriander powder 1tbsp

Red Chilli powder 2tbsp

Paya masala 2tbsp heaped

Garam masala powder 1tsp

Clarified butter/oil 1 cup

Ginger garlic Paste 2 tbsp

Daighi red chilli powder 1tsp

Salt to taste

Yogurt 1/2 cup

Chopped coriander leaves 2 tbsp

Green chilies chopped 2

Julian ginger 1tbsp

1 large onion sliced

Brown onion 2 tbsp

Lemon wedges to serve


Method


Heat ghee fry onion till light golden ,

Blend fried onion amd yogurt.

In same oil add blended mixture add ginger garlic paste, chilli powder coriander powder , paya masala ,salt cook the masala well.

Pour cooked masala into trotters broth and again cook for atleast 1-1/2hour on dum


sprinkle Garam masala powder lastly


, serve with chopped greens, lemon, brown onion,Julian ginger
