Beef Deghi biryani

Ingredients


Soaked rice 1/2kg (seela / basmati)

Beef 1/2kg with bone

Ginger garlic paste 1tbsp

Green chilli paste 2tbsp

Tomatoes large 4

Yogurt 1 cup

Salt 1tbsp

Red chilli powder 1tsp

Turmeric powder 1/4tsp

Red crushed chilli 1tbsp

Zeera powder 1-1/2 tbsp

Chaat masala 1tsp

Garam masala powder 1tsp

Star anise 2

Cloves 6

Black pepper corn 8

Caraway seeds 1tsp

Green cardamom 6

Black cardamom 2

Cinnamon stick 1 medium

Bay leaf 1

Lemon 1

Dried plum 10

Fried onion 1 cup

Coriander and mint leaves 1/2cup

Kewra water 1/4tsp

Zarda food colour as required

Oil 1 cup


Method


For rice


Boil water along with bay leaf cloves Caraway seeds star anise black cardamom cinnamon stock 2tbsp Salt and few drops of kewra water

Put rice and cook them till half done

Strain them and keep aside


For masala


Heat 1/2cup Oil add ginger garlic paste saute for 1 min now add meat and fry for 10 mins add 2cups of water cover and cook till half tender

Now put blended mixture of tomatoes 1/2cup yogurt turmeric powder red chilli powder cumin powder red crushed chillies green chilli paste 1tbsp, and salt

Cook till done


For Hara Masala


In bowl add chopped coriander and mint leaves Green chilli paste 1tbsp, cumin powder 1/2tbsp, chaat masala , Lemon slices 1/2cup yogurt , Garam masala powder, dried plums and fried onion .


To assemble


Put Hara masala over the prepared beef masala sprinkle some Zarda colour on it now put half done rice drizzle 1/2cup Oil more zarda colour on top add some kewra water and put it on dum for 15 mins
