It is v different recipe, no onions, tomatoes and yogurt is used. Its only made with garlic ginger and Karhai spices, yes thats right!!! .
The end result is so yummy as you get juicy fried chicken’s taste with chatpatay masalas.
Ingredients:
Chicken 1 kg
Green chillies 20-25
Ginger garlic finely chopped 2 tbsp
Salt to taste
Ghee/ butter / oil 1 cup
Black pepper 1 tsp
Lemon juice 2 tbsp
Green Corriander as required
For Karahi Masala:
Rosted crushed corriander seeds 1 tbsp
Rosted crushed cumin seeds 1 tbsp
Rosted crushed chilli flakes 1 tbsp
Whole Blackpepper 1 tbsp
Chaat masala 1 tbsp
Black salt 1 tsp
Garam masala powder 1 tsp
Khatai powder 1 tsp
Dry fenugreek leaves 1 tsp
Roast Corriander, Cumin, Blackpepper, and Chillie flakes and grind them.
Mix with rest of the spices and keep aside .
Method: .

- Heat oil and Chicken together and fry until it changes colour. Now add green chillies and fry at high flame for 10-15 mins till your Chicken starts to get a bit golden brown in some places.

- Now take out chicken and chilles from oil. - Take out half of the ghee and set aside. .

-In remaining, add ginger and garlic and fry for two minutes. .

- Now and chicken and chilles, salt and keep and cook on low flame. .
.
- Optionally you can add quarter cup water until chicken tenderises. .

- When chicken is cooked completely and water dries out, add prepared Karahi masala. Give it a good stir and put it on dum for 5 min.

-Add lemon juice and coriander and give a final dum. .

- Lastly, add coal smoke (optional) .
.
- Ready to serve with raita and paratha. .
