American Chopsuey

I'm pure rice lover and I love to eat rice with noodles and crispy chicken so created this.


Ingredients:

Egg noodles 1 packet

Boneless chicken 1 cup

Salt 1/2 tsp

White pepper 1/2 tsp

Soya sauce 1 tbsp

Corn flour 2tbsp

Carrot 1 (cut into juliennes)

Capsicum 1 (cut into juliennes)

Onion 1 (cut into juliennes)

Green onion leaves 1/2 cup

Cabbage 1 cup finely chopped

Egg 1 (half fry for garnish optional)

Boil rice 2cups

For sauce:

Oil 2 tbsp

Ketchup 4 tbsp

Salt 1/2 tsp

Stock 1/2 cup

Crushed garlic 1 tbsp

Vinegar 2 tbsp

White pepper 1/2 tsp

Corn flour 1 tbsp (dissolved into 2 tbsp water)

Chilly garlic sauce 3 tbsp

Sugar 2 tbsp

Chicken powder 1 tsp


Method

Marinate chicken with salt, white pepper , soya sauce and corn flour 2tbsp heat oil and deep fry chicken till golden crispy.


Boil noodles for 5 minutes, strain pat dry them and deep dry in batches till crisp.

Heat oil sauté crushed garlic, add in vegetables, sauté for 2 minutes,

Remove from pan keep aside

In same pan add stock ketchup salt pepper vinegar chilli garlic sauce chicken powder bring it to boil add dissolved corn flour cook for 2mins.


Take a bowl layer down boiled rice fried noodles put some veggies and fired chicken and vegetables over fried noodles then pour sauce Top with fried egg garnish with spring onion.
