It is aromatic... flavourful and traditional....

Ingredients:


Chicken 1kg Rice basmati 2.5 cups Oil canola 1/4cup Onions 2 medium Tomatoes 2 medium blended Salt to taste Garlic 4 cloves finely chopped Homemade Afghani pulao masala 2 tsp for chicken and 1tsp on dum Carrots 2 medium julian cut Raisins half cup (black or golden) Sugar 1tablespoon

For YAKHNI: Put chicken..water 4 cups... whole 3 garlic cloves... salt.. pinch of turmeric... 1 small onion.. whole garam masala.. cloves.. blackpepper... cinnamon.. green cardomon..zeera.. in a put...bring it to boil... when water become 3 cups.. strain the yakhni and take out chicken pieces....

FOR PULAO....

In a pot.. put oil ..onions finely sliced.when onions become light golden brown thn add garlic paste or finely chopped garlic..saute it.. then add chicken pieces and afghani pulao masala..Also fry it till golden colour appears on top.. make sure chicken doesnot break..... After that take out chicken pieces... and add blended tomatoes and salt.cook it and bhoonify it with masala... when masala and oil gets separated...thn add golden brown chicken pieces... Soak your rice for about 1 hour.Add soaked rice and yakhni and adjust ur salt..cook rice and give dum for about 15mins..on dum also put 1tsp of Afghani pulao masala on top.

FOR CARROTS AND RAISINS: Take a pan.put 2 tablespoon of oil..put julian cut carrots..saute it..until soft..thn add raisins.. and sugar 1 tablespoon..let the sugar caremelize.cook it... Put it on top of your pulao.

FOR AFGHANI PULAO MASALA: zeera 2 tablespoon Cloves 1tsp Black pepper corn.1tsp Star anise 1 Cinammon 1 stick Green cardomom 1tsp Black cardomom 2 Dry Roast it in frying pan.. thn blend it finely in a grinder... your homemade masala is ready..it is very Aromatic.

Enjoy ur Afghani pulao with raita ..tomato chuttni or salad...😊
