*Ingredients* Rice 2 kg Mutton 1.5 kg Onion 4 medium size Galic /ginger paste Garlic cloves 8 Ginger 1 /3 piece Curd (Dahi ) 1 cup Carrots 4 medium size peeled and cut in julian cutting Sugar 1/2 cup Salt to taste Almond boiled and peel of the skin cut an almond in four piece or more. Raisins washed and dried Dry fruits should be there in generous amount while making Afghani pilao.
*Garam Maslaa* sabot Cloves 4 Cummin (Zeera saifad) 2tb sp powdered Taeez pata 4 Dari chini (cinnamon)4 stick Bari elachi 3 Cardimon 6 pods powdered Black pepper corns 12 Sauf 2 tbsp heaped Saboot Dhania 1 1/2 tpsp heaped *Step 1* Make yakhni of Mutton portion usually used for making pilauo. *Add 1.5 liter of water in a pot add in mutton ginger/ garlic paste 2 tbsp * add cloves (saboot with skin) of garlic and ginger piece in the pot * peel onion dont slicec it just slide it in the pot. * saboot garam masala Boil it till oil of mutton comes on surface and meat is tender not soft with aroma of yakhni all over. Strain the yakhni in a rice strainer.
*Step 2* Soak saila rice for 1/2 an hour or 45 minutes * pour some oil in a pan.Throw in carrots and saute it on low flame adding 4 to 8 spoons of sugar with 2 pinch of salt. When u see a glazed coating of sugar on carrots set it aside.Dont break the carrots move your spatula gently in the pan. *Fry almond and Raisins in same oil.
*Step 3* 1 onion sliced add oil till brown Add ginger garlic paste 1/2 spoon Paste of saboot garlic cloves and onion in oil with meat and bhoonafy and dahi 1/2 cup and again bhoonafy ..no need to add garam masala as taste is already there.when oil comes on surface it means the meat is ready to be mixed with yakhni.Take out half of the meat portion in a plate and set it aside.
*Step 4* In a pot pour in 7 to 8 tb sp of sugar caramalize it on low flame pour in yakni and let the caramel mix in it let it boil. * Add rest half meat portion and let it boil on high flame for a minute * add soaked saila rice in the boiling yakni pot now let it cook till yakni water dries out not whole you can hear the cracking voice as its drying out. * put the pot on pre heated tawa.This gives life to the rice they grow bigger in size and are khila khila chawal 😊.
*Last Step* Add the set aside meat carrots Almonds Raisins and in last fried onion in small size red in colour. *Dish it out u will love to eat it. No need to add raita or dahi..thats the beauty of Afghani Pilao*
